Most diabetics can eat anything they want in a reasonable limit of size of serving. They can adjust other carbohydrates to incorporate the "forbidden" sugar and obese foods.
So make your mother a nice chocolate cake with fudge icing and tag on some nuts to it too.
How about something that is not food related? Cards, flowers, spa contribution certificate, jewelry...

Your mom can eat pretty much anything you can eat, provided it is not over-processed second-hand goods food. Choose whole grains over white flour, evaporated wicker juice or splenda over white sugar, lean proteins, and lots of fiber rich produce. For a dinner idea, you could variety grilled steak or chicken breast (marinate in A-1 and Italian Dressing for an hour, 50:50), plus a salad and grilled artichokes. For an easy dessert, you could take home pavlova (basically, baked meringues), filled with sugar free pudding (jell-o make instant and cooked sugar free) that you combine with a bit of whipped cream to peroxide, and fresh berries. The pavlova has very little sugar within it, and the rest is sugar free.
